  1. Fresh Vegetable Enchiladas

 

Enchiladas are a classic Mexican dish that can be easily customized to include your favorite veggies. Here’s a recipe that’s perfect for using up your garden’s harvest:

Ingredients:

  • 1 can of black beans, drained and rinsed
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 zucchini, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 8-10 whole grain tortillas
  • 2 cups of enchilada sauce
  • 1 cup of shredded cheese

Instructions:

  1. Preheat the oven to 180°C.
  2. In a large skillet, sauté the onion, red and green bell peppers, and zucchini until softened.
  3. Add in the black beans, cumin, chili powder, salt, and pepper. Cook for a few more minutes.
  4. Spread a few spoonfuls of enchilada sauce on the bottom of a baking dish.
  5. Fill each tortilla with the bean and vegetable mixture and roll up.
  6. Place the rolled tortillas in the baking dish and top with the remaining enchilada sauce.
  7. Sprinkle shredded cheese on top of the enchiladas.
  8. Bake for 25-30 minutes or until the cheese is melted and bubbly.
